Every one of them returned for all three days. What happened was about far more than mops, windows and certificates. It was about trust, effort, laughter and being given the opportunity to show what they can do

They worked together and practised the jobs expected in a real cleaning workplace. From windows and carpets to kitchens, bathrooms and shared spaces, each activity gave them the chance to learn by doing, ask questions and build confidence with the equipment. EVERY DETAIL MATTERED The group learned that professional cleaning is not simply about making something look clean. It is about working safely, following a system and paying attention to the small details. Colour coding, correct equipment and safe cleaning methods became practical skills they could understand, practise and take into the workplace.

beyond training FIRST EDITION • SEPTEMBER 202609 Grind Size Matters Small adjustments make a big difference. KEEP YOUR TAMP LEVEL Consistency matters more than brute force. CREATE SILKY MILK Listen, watch and feel. 1 2 3 The grind controls how quickly water moves through the coffee. Too coarse and the shot may run too quickly. Too fine and it may run too slowly. Adjust it one small step at a time. An even tamp helps the water travel through the coffee properly. Keep your wrist straight, apply steady pressure and check that the coffee bed is level before brewing. Introduce a little air near the beginning, then create a whirlpool to blend the milk. The finished texture should look smooth and glossy, like wet paint—not stiff, bubbly foam.SKILL SPOTLIGHT • BARISTA BASICS

beyond training FIRST EDITION • SEPTEMBER 202617 NO PLAN. JUST A FIRST STEP. EVERY DOOR SAID NO. I WANTED TO BE A CHEF. I wanted to be a chef. But even before I got started, the road already felt blocked. At fifteen, finding any job was hard enough. Landing a cooking apprenticeship felt almost impossible. I had no connections, no formal qualifications and no one willing to give a kid like me a chance. I didn’t want a handout. I just wanted a foot in the door. I was ready to work, ready to learn and more than anything, I needed someone to give me a go. Each rejection made me more determined to find another way forward. Then I came up with a new plan. I told Mum I wanted to move back to Mount Gambier, South Australia, where I could get my licence at sixteen. She knew I was serious. After a few conversations, she agreed. After spending three days with your team, I realised that I'm capable of doing more and that I should follow the career I truly want. I’ve been thinking about it, and the job I really want to do is dental assisting, rather than support worker. I wasn’t sure what to expect coming into training with Letizia’s, but I’m leaving feeling confident in my coffee knowledge and skills. The team was amazing, full of energy and patience. NEW CHAPTER. SAME DAD JOKES. Needing equipment for an upcoming cleaning course, I headed to Everyday Supplies to see Jeanette. She knows me well enough to expect plenty of questions and a few dad jokes while she hooks me up with the right gear. Everyday Supplies has supported me since 2002, first at our restaurant and now at Letizia’s Training & Development. Different chapter. Different equipment. Same great people. COFFEE, CONVERSATION AND GREAT FOOD. I caught up with James at Bicaro’s Ristorante to put the finishing touches on a coffee workshop for his staff. James is passionate about what he does. His food is awesome, and now we’re helping his team sharpen their coffee skills too. A great local business investing in its people. That is always worth getting out and about for.
