Banku & Aborbi TadiBanku Serve the hot, freshly made banku with a generous portion of aborbi tadi and fish.Instructions: Prepare the dough: Place the cassava dough in a bowl and add water. Mix thoroughly, then sieve the cassava dough to remove any lumps or unwanted particles. Combine: Add the prepared cassava dough to the fermented corn dough and mix well. Cook: Pour the mixture into a heavy saucepan and place over medium heat. Stir continuously with a wooden banku stick as it begins to thicken. Keep stirring: Continue turning and kneading the banku until it becomes firm, smooth and stretchy. Steam: Add a little water, make a few holes in the banku, cover and allow it to steam for about 5–10 minutes. Finish: Stir and knead once more until the banku is smooth and well cooked.12 Ingredients: 2 cups fermented corn dough 1 cup cassava dough 3–4 cups water Salt Ingredients: Plenty of fresh kpakpo shito 🌶 2–3 fresh tomatoes 1–2 fresh onions Salt, to taste Smoked, fried or grilled fish, to serve Maggi Arôme Aborbi Tadi Grind the pepper: Put the fresh kpakpo shito and salt into an asanka and grind until the pepper is coarse and textured — not completely smooth. Add the tomatoes: Add the fresh tomatoes and continue grinding until they are incorporated into the pepper. Grind the onion: Add the fresh onion and grind it into the pepper. Don’t grind all of it completely — leave some small pieces of onion for that fresh texture. Add the fish: Flake some smoked fish into the aborbi tadi, or serve the fish separately. Taste and adjust: Add salt if needed. Make sure there is plenty of kpakpo shito for that proper Volta-style heat. 🌶Keep a bottle of Maggi Arôme on the side for Daddy to use — because apparently, there is no such thing as too much pepper.Daddy likes his aborbi tadi coarse and textured — never too smooth. And when the kpakpo shito gets very hot, he likes to add a little Maggi Arôme to it.
